This crisp and fruity unwooded Chenin Blanc has lively acidity to appeal to even the most hardened of white wine lovers (go on, try it!) Expect green guava, pear, apple, and hints of litchi on the nose with a well-balanced palate and a strong finish.

Coquilles Saint-Jacques

Recipe By All Recipes 


  • 2 tbsp unsalted butter
  • ½ cup diced shallots
  • ½ pound white button mushrooms, sliced
  • Salt and freshly ground black pepper to taste
  • 1 cup white wine
  • 1 pound sea scallops
  • ½ cup heavy whipping cream
  • 1 egg yolk
  • 2 tsp minced fresh tarragon
  • 1 tsp lemon zest
  • 1 pinch cayenne pepper, or to taste
  • 4 large oven-safe scallop shells
  • ¼ cup shredded Gruyere cheese
  • 1 pinch paprika
  • 8 fresh tarragon leaves


  1. Melt butter in a large skillet over medium heat; add shallots and sauté until translucent, 5 to 8 minutes. Stir in mushrooms, salt, and black pepper; increase heat to medium-high and cook, stirring often, until mushrooms are golden brown, about 10 minutes.
  2. Pour wine into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon; bring to a simmer. Gently place scallops into wine and poach in the mushroom mixture until barely firm, about 2 minutes per side; transfer scallops to a bowl. Strain mushroom mixture into another bowl, reserving mushrooms and cooking liquid separately.
  3. Return strained liquid to the skillet, pour in any accumulated juices from scallops, and stir in cream. Bring to a boil and cook, stirring often, until cream sauce is reduced by about half, about 10 minutes. Turn off heat and let mixture cool for 1 minute.
  4. Quickly whisk egg yolk into cream sauce until combined. Transfer skillet to a work surface (such as a heat proof countertop or cutting board) and stir 2 in teaspoons tarragon, lemon zest, and cayenne pepper.
  5. Divide mushroom mixture into scallop shells, spreading it out to cover the bottoms of shells; place about 3 scallops onto each portion. Spoon cream sauce over scallops to coat; let sauce drizzle down into mushrooms. Sprinkle lightly with Gruyère cheese and paprika.
  6. Preheat the oven's broiler. Slightly crinkle a large sheet of aluminium foil and place onto a baking sheet. Place filled shells onto foil and press lightly to help them stay level.
  7. Broil in the preheated oven until bubbling and the cheese is lightly browned, 5 to 6 minutes.
  8. Transfer to serving plates lined with napkins to prevent shells from tipping; garnish each portion with 2 crossed tarragon leaves.

Willow Park Wines & Spirits will deliver orders to a residential or business address. If possible, it’s recommended to ship to a business address for the reasons below:

  • Someone of legal drinking age must be there to receive and sign for the delivery
  • If no one is home after 2 delivery attempts, the package will be shipped back for pickup at our Main Store location in Willow Park Village for you to pickup within 48 hours. Under no circumstances are we able to leave an order unattended. If you would like another reattempt at delivery, please reach out to us at ecomwhse@willowpark.net to have a new delivery booked.

Willow Park Wines & Spirits offers delivery everyday between the time slots of 11am - 3:30pm and 4pm – 8pm. Calgary Local Delivery is $8.

  • Refunds can be made up to 30 days after purchasing the item(s).
  • If the item(s) is in sellable condition, it will be refunded. Orders that have incurred a shipping fee can be refunded minus the shipping costs. Return shipment fees are at the cost of the customer wishing to cancel the order.
  • Wines older than 7 years and/over $100 will not be refunded unless the respective producer agrees to have it replaced.

If you are not at the delivery address to receive your shipment, Canada Post will keep Products at a postal outlet for fifteen (15) days before returning product(s) back to Willow Park Wines & Spirits. If the package is returned for any reason (ex. a wrong shipping address was provided, delivery went unanswered or was refused, or the package(s) was left abandoned at pickup outlet), no refund for shipping fees will be provided.  Once products are returned, we may cancel your order and issue a refund to the credit card used minus the shipping fees. If you choose to have your package re-shipped, there will be an additional charge to cover those fees.
