To produce the wine of Chateau Canon La Gaffeliere, the grapes are whole berry fermented in temperature controlled 12 oak vats which vary in size for 100 to 110 hectoliters. Malolactic fermentation takes place in 100% new, French oak barrels from a total of eight different coopers.
The wine is aged on its lees in 100% new, French oak barrels for 15 to 18 months. On average, 5,000 cases of Canon La Gaffeliere are produced each year.
This is a warm, rich wine with spicy black-fruit flavors. Touches of coffee have come through with the wood aging. Bright acidity gives a touch of freshness to the firm tannins at the end. Drink this generous, while still serious wine from 2020
