He recommends a refreshing salmon with risotto made of organic barley and chanterelle mushrooms from Saskatchewan. Crème fraîche is added in with roasted greens and butternut squash purée. Top it off with corn relish, and enjoy!

The wood from oak aging compliments the butternut squash notes and captures the richness of the salmon.
