The Classic Bellini

‚ÄčThe Bellini was first served in Harry's Bar, Venice, Italy, in the 1940's - a cool drink with white peaches and prosecco.  A lot of variations of the Bellini exist today - but give the original a try!


  • 2-3 ripe white peaches
  • 750mL bottle of prosecco


  1. Chop peaches and blend until smooth using a blender or food processor (Note: If you want to go extra-authentic, use a food mill!)
  2. If your peaches weren't in the refrigerator beforehand, chill the peach pureé for a couple of hours
  3. Spoon the peach pureé in to a champagne glass, then fill the glass with prosecco - the correct ratio is 1 part peach pureé to 3-4 parts prosecco
  4. Stir gently with a spoon
  5. Enjoy!

Notes: add a bit of cherry or raspberry juice for a sweeter, rosier version of this cocktail.
