Glenfiddich Bread Pudding

We hope everyone who attended the Exclusive Scotch Seminar last night had a great time!  Check out the below recipe for Glenfiddich bread pudding (with Glenfiddich sauce!)

Glenfiddich Bread Pudding

Ingredients

  • 6 cups cubed bread, crusts removed
  • 1/2 cup apricots, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • 1 cup Glenfiddich
  • 4 eggs
  • 1 cup sugar
  • 2 cups half & half
  • 1 cup whipping cream
  • 1 tsp vanilla
  • 1/2 tsp cinnamon

Directions

  1. Pre-heat oven to 375 degrees.
  2. Butter a 13 x 9 inch glass dish.
  3. Marinate the apricots in 1/2 of Glenfiddich and set aside.
  4. Whisk eggs, cinnamon and 3/4 sugar together.
  5. Whisk in half & half, cream, vanilla and 1/2 cup Glenfiddich.
  6. Spoon in the bread and fruit, stirring lightly.
  7. Pour in to the prepared dish.
  8. Toss walnuts in remaining sugar & sprinkle on top.
  9. Bake 45 minutes.
  10. Serve with Glenfiddich sauce.

Glenfiddich Sauce

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1/4 cup Glenfiddich
  • 1/2 tsp nutmeg
  • 1 tsp cornstarch
  • 1 egg, beaten

Directions

  1. In a medium-sized pan, combine butter, sugar, cornstarch, and nutmeg over low heat.
  2. Stirring constantly, add Glenfiddich.  Heat until bubbly.
  3. Remove from heat and stir in egg.
  4. Return to heat & bring to boil over low heat.
  5. Continue stirring and cook 1-2 minutes.
  6. Remove from heat and spoon over pudding.
